6. SMOKY BLACK BEAN CHILI
"This is definitely one of my favorite winter soups. It is quick, it can usually be made with simple staples I keep on hand, it is a really inexpensive meal, and it’s fresh and healthy. But more than that, it is SUPER delicious with the extra kick of chipotle and bottle of beer in there. I love topping mine with avocados and cheese and maybe a few crumbled tortilla chips. But you can also easily omit the cheese to make it vegan." - ALI

9. BBQ Chickpea Flatbread Pizzas with JALAPEÑO PLUM BBQ SAUCE
"BBQ chickpeas, avocado and peach make a pretty astounding combination, especially when topped with a bit of ranch dressing. The plums add sweetness to the barbecue sauce but I like to think the fruitiness of it also highlights the peach slices and pairs beautifully with the richness of the avocado. This meal is one delicious way to use up your CSA (or farmer’s market) stockpile!" - Kristy

12. Jumbo Stuffed Shells
"There’s a recipe for basic stuffed shells in her Clean Food cookbook, so I played around with it by adding more veggies and fresh herbs. The outcome is a tasty tofu “ricotta-like” cheese that can be added to stuffed shells, spread on lasagna, or even turned into eggplant rollatini if you are so inclined. Of course, it doesn’t taste exactly like ricotta cheese (not that I even remember what it tastes like!), but it sure is a tasty dairy-free alternative" - Angela

"making a fresh quinoa salad tossed with spicy taco seasoning and then we’ll add some diced corn tortilla strips right into the bowl along with all the other ingredients. This is actually one of my favorite things to eat. It’s a perfectly balanced meal with fresh veggies, whole grains, and healthy fats. It’s a great combo of delicious flavors and like so many “one ingredient” recipes, you could pretty much eat this at every meal and only get healthier." - Andrew Olson
